Alma De Cuba, Cuban Cuisine

ALMA DE CUBA IS AN INDEPENDENT SPIRIT THAT LEAVES A LASTING IMPRESSION. SET INSIDE A MAGNIFICENT CONVERSION, IT IS A VIBRANT MIX OF CUBAN, HISPANIC, AND LATIN AMERICAN CUISINE. IT IS A BASTION OF LIVERPOOL’S GREAT, DIVERSE RESTAURANT SCENE.

Words: Jean Hill

We step into a space of immense beauty and shifting light. We take in dazzling Gothic windows, and enchanting stone arches and wooden carvings. We could be perfectly happy just gazing with rapt attention at our stunning surroundings. Since this is a great restaurant, that would be foolish.

The new menu seems to come with options, so check out any special offers. There are many meat, fish, including mullet and scallops, and vegetarian dishes to choose from. With a rich mix of spices, even dessert comes with a subtle kick.

I had sweet potato and chorizo croquettes with rocket and garlic mayo as a starter. I loved, the sweet potato, lightly fried until crisp and golden. It rested on a bed of creamy sharp mayonnaise that counter-balanced sweetness. My main was pan roast chicken supreme. It had a crispy skin and fluffy Risotto rice with a cream sauce. Risotto is an art that cannot be rushed to achieve that rich, velvety consistency.

My companion had burned plum tomato corn bread bruschetta. Goats cheese and juicy plum tomatoes with corn bread takes me straight back to Cuba. My companion had an 8 oz steak that was medium rare and barbequed to perfection in the style of Brazilian open-air cooking.  The steak, allegedly, melted in his mouth. That particular burst of flavour is about the quality of the meat, and the intense, fiery method of cooking.

We both had the most indulgent chilli chocolate brownies. The chilli was subtle but enough to tingle our taste buds and sharpen the flavour. Chicken and sweet potato worked really well with a bottle of fruity fizzy prosecco. A memorable evening. It is an unmissable experience. Check it out.
